I don't know what's going on, but what is that "Code:" doing at the
beginning of your message?

I don't know what's going on, but what is that "Code:" doing at the
beginning of your message?
That's what this software needs to keep the format of the post.

It's put in there by the vBulletin software when you use the vB code tag for a preformatted listing. The tag causes the text to be posted in a monospaced font and keeps the embedded spaces from being condensed out. That way the columns line up neatly. The tag goes by the name of "code" because it was originally designed to allow programmers to post fragments of programming code in an intelligible way.

The [ CODE ] (wtihout spaces) tag, and the [ /CODE ] to close it, are
used in the vBulletin software to offset fixed-width font stuff...
usually source code, but it works conveniently for scores.

But the word was "Code:" with no square brackets and in the message I
looked at, there was no matching ending item. And if those were tags,
why would they show up in the message? Why wouldn't they be hidden?

Because the [CODE] tag also inserts "Code:" at the top of the text that it affects, just as the [QUOTE] tage puts "Quote:" at the top of the text that it affects.
