Dodi,

it is a relatively common in pubs over here that a low door will have a
notice "Duck or Grouse" but I have heard of one where all the doors are low
and grousing is so common that they have a collection box (actually a swear
box) called a grice box to fine gricers - all proceeds to charity

No, I think grouse is one of those words, like sheep, where the singular and plural are the same.
